Ingredients for Antipasto Weight loss Salad

  • 1 head of romaine of fresh  lettuce chopped
  • ½ cup of fresh  red onion sliced
  • ¼ cup roasted fresh red peppers drained and patted dry
  • ½ cup of  jumbo black olives halved
  • Half cup green olives halved
  • Half cup cherry tomatoes halved
  • 400 grams of marinated artichoke hearts drained and patted dry
  • Half cup of  dried pepperoni chopped
  • Half a cup of  fresh mozzarella chopped
  • Five  whole pepperoncinis
  • 2 tbsp of parsley leaves chopped

Red Wine Vinaigrette

  • Half cup extra virgin olive oil
  • One-fourth cup of red wine vinegar
  • One-eighth tsp of garlic powder
  • Half  tsp of salt
  • One-eighth tsp of  black pepper

Directions

  1. Add all the salad ingredients to a large bowl.
  2. Add all the ingredients for the Red Wine Vinaigrette to a medium-sized jar. Tight the lid. And Shake the ingredients together to mix. Pour over salad and toss!
