Ingredients for salad

Pasta Salad

  • One lb rotini pasta
  • One large cucumber
  • One large shallot
  • One cup of chopped scallions
  • Three avocados

Cilantro Lime Dressing

  • Half cups olive oil
  • Three tbsp white balsamic vinegar
  • Two tbsp cilantro
  • Two lemon juice only
  • Salt according to taste

Instructions

  1. Cook pasta according to the instructions, drain and set aside to cook. Once the pasta has cooled, pop it in the refrigerator to chill for about 30 minutes.
  2. Slice cucumbers, shallot, and dice scallions. Peel and dice two of the avocados and mash one of the avocados.
  3. Combine vegetables and pasta in a large mixing bowl. Season with some salt.
  4. For dressing
  5. Combine all ingredients for the dressing together, mix well and add it to the pasta mixture.
  6. Combine everything together until completely combined. Serve right away.
