- 4 medium potatoes (500g)
- 1 cup brown lentils, cooked
- ½ red onion
- 1 handful of parsley, fresh
- 1 tbsp olive oil
- 1 tbsp vinegar
- 2 tbsp mustard
- 1 tsp maple syrup
- 1 bell pepper

How to Make The Vegetarian Lentil and Potato Salad
When using a microwave, set it to 1000 watts. The cooking time for 4 medium potatoes will be around 10 minutes. You may need to microwave the potatoes for fewer or more minutes, depending on their quantity and size.
If using a stove, cook the potatoes for 20 minutes, or until soft, in salted boiling water.
Cut the bell pepper into small pieces and dice the onion. To a salad bowl, add both.
Blend in the lentils, previously drained and rinsed; if you use dry lentils, cook according to package instructions first.
The parsley should also be chopped and added to the bowl.
Add the salt, pepper, mustard, maple syrup, vinegar, and olive oil, and combine everything thoroughly.
Now add the cooked potatoes to the salad. Enjoy!
